Who knew stuffing a chicken with a boiling hot lemon and wrapping it in panchetta would be so awesome, and look so funny? I bought a whole chicken on Friday intending to make it this weekend inbetween working and studying and this afternoon seemed like a good time to tackle the recipe.
It’s pretty simple, from Jamie Oliver’s Jamies Dinners. (My favorite cookbook) It calls for par boiling the potatoes with a whole lemon for 12 minutes then stabbing the hot lemon a bunch of times and putting it inside the bird. This is actually supposed to decrease the cooking time and make the chicken extra tender. The panchetta will be crumbled up and mixed in the the garlic and potatoes, from what I understand it’s a little better for you than commercial bacon, less preservatives and salt etc. (Hopefully)
I really love Jamie’s cookbooks. So far I have Food Revolution, Jamie at Home and Jamies Dinners and while I don’t use all of his recipes, some have become staples. Also, most of his recipes are online for free at his website which makes it extra handy, although his cookbooks are always so pretty I like to buy them anyway.
