There were two pickling cucumbers in my garden that were ripe earlier than the others, I left them on the plant for about a week hoping the others would catch up but they just kept getting bigger and the others ones are still tiny. I picked them today and decided to make this Dilled Cucumber Salad. It’s based on this recipe but I modifed it a little by using fresh garden dill (yum!), less sugar/onion and adding a chopped hungarian pepper which was also from my garden. It’s marinating now, hopefully it will be tasty!
